Homemade pizza with hand-made dough

Dough from scratch, a sauce in ten minutes, and whatever cheese is in the fridge. The recipe for four, step by step.

Like pizza but want to try a homemade version? With a few steps and the right ingredients you can make your own.

Ingredients

For the dough (serves 4)

  • All-purpose flour — 500g
  • Dried yeast — 1 sachet
  • Warm water — 300ml
  • Olive oil — 2 tbsp
  • Salt — 1 tsp
  • Sugar — 1 tsp

For the sauce

  • Ready tomato sauce, no additives — 1 jar
  • Garlic — 1 clove, crushed
  • Olive oil — 1 tbsp
  • Salt, pepper, oregano

To top (a suggestion)

  • Grated mozzarella — 200g
  • Kasseri or graviera — 150g
  • Green pepper, sliced — 1
  • Mushrooms, fresh or dried

Method

1. The dough

Dissolve the yeast and sugar in the warm water in a bowl. Add a little of the flour and mix well. Leave it for 5 minutes, until it starts to bubble.

Add the rest of the flour, the salt and the olive oil. Knead until the dough is elastic. Cover with a clean tea towel and leave it somewhere warm to rise for an hour.

2. The sauce

Soften the garlic in the olive oil in a small pan. Add the tomato sauce, salt, pepper and oregano. Simmer for 10–15 minutes.

3. Assembly

Roll the dough out. Spread the sauce evenly, leaving a finger's width at the edge. Add the cheeses, the pepper and anything else you want.

4. Baking

Heat the oven to 220°C. Bake for 12–15 minutes, until the edges colour and the cheese melts.
